Sparkling Champagne Cupcakes

A bubbly treat to ring in the New Year!

Cupcakes:

  • 1 1/4 cups flour

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup butter (softened)

  • 1 cup sugar

  • 2 eggs

  • 1 tsp vanilla

  • 1/2 cup champagne


Frosting:

  • 1/2 cup butter (softened)

  • 3 cups powdered sugar

  • 3 tbsp champagne

  • 1 tsp vanilla

  • Edible glitter (optional)


Instructions:

  1. Prep: Preheat to 350°F and line cupcake tin.

  2. Batter: Mix flour, baking powder, and salt. In another bowl, beat butter and sugar until fluffy. Add eggs, vanilla, then alternate adding dry mix and champagne.

  3. Bake: Fill liners and bake for 18–20 minutes. Cool.

  4. Frost: Beat butter, add sugar, champagne, and vanilla. Pipe onto cupcakes and decorate with glitter.
